Click 'ANSI (North America)'. Open the preset category in the sidebar.

Choose 'Legal'. The layout updates to 8.5×14 in instantly — no math needed.

Turn on 'Bleed & Crop Marks'. Adds 0.125 in of bleed so color runs to the trimmed edge of your menu.

Click 'Create'. The plugin generates your print-ready page on the canvas.
